A 2010-2024 scoping review documents 166 U.S. higher education institutions across 36 states and D.C. applying marketing-mix choice architecture strategies to encourage plant-rich menu options. The analysis categorizes evidence into eight strategy domains, with profile being the most common (96.99%). The dataset compiles findings from 363 reports identified through systematic database and gray literature searches.
