Untargeted UHPLC–Orbitrap metabolomics and targeted GC–MS quantification of 49 free fatty acids reveal how high-pressure processing reshapes early lipid mobilization in Camellia oleifera seeds during a hot–humid postharvest window. The dataset, authored by Jianwen Wu and shared under CC-BY-4.0 on figshare, compares four treatment regimes: untreated baseline, hot–humid holding alone, and holding preceded by HPP at 100 or 500 MPa. Forty-two FFAs were detected with high within-regime reproducibility, showing the 500 MPa regime produced the strongest lipid-mobilization phenotype.
